Carolina Sweet Potato Pie

Sweet potatoes are deeply rooted in North Carolina’s food traditions (the state is the #1 producer in the U.S.). This pie is smooth, spiced, and soul-warming — a Southern classic.

Ingredients:

  • 1 unbaked 9-inch pie crust
  • 2 cups mashed, cooked sweet potatoes (about 2 large NC sweet potatoes)
  • 1 cup granulated sugar
  • ½ cup butter, melted
  • 2 large eggs, beaten
  • ¾ cup evaporated milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine mashed sweet potatoes, sugar, and melted butter. Mix until smooth.
  3. Stir in eggs, evaporated milk, vanilla, cinnamon, nutmeg, and salt until well blended.
  4. Pour filling into the unbaked pie shell.
  5. Bake for 50–55 minutes, or until a knife inserted in the center comes out clean.
  6. Cool before serving. Serve with a dollop of whipped cream or drizzle of sorghum syrup for a true NC touch.
